    Strawberry-Rhubarb Compote

    Sure i could make a pie, but pies take effort and some skill that i don't really have.  This takes literally 1 to 2 minutes of prep, and you still get all the spring-y goodness.
     
    a few stalks of rhubarb
    a handful of strawberries
    sugar
    water
     
    Dice the rhubarb and strawberries - smaller will give you a smoother end result, larger = chunkier in the end.  Throw the rhubarb in a small pot with a couple of tablespoons of sugar and a couple of tablespoons of water.  If you're making this as a dessert, you can do all of that while prepping the main meal and leave the pot sitting on the stove until you're done, or nearly done, eating.  Bring the pot to a boil, reduce to a simmer, and let cook 5-10 minutes.  Throw in the strawberries, stir, and let cook up to 5 minutes more.  Cool somewhat - you can transfer the pot or a bowl to an ice bath to cool it quickly.  Serve w/ vanilla ice cream.
